Wayne Van Akin
Wayne Van Akin, Director of Operations for the Vineyards Chop House-Bar and Crowne Plaza Hotel is a former Executive Chef. The Vineyards Chop House- Bar concept was a creative collaboration and concept that was developed by Mr. Van Akin and General Manager, Larry Ross.
Wayne’s love affair with food began at an early age. As a child and young adult, Wayne spent many hours in the kitchen with his Mother and Grandmother preparing family recipes. It was during this time, he learned to appreciate preparation and tradition. Although the thing he valued most was that food brought friends and family alike together. Years later, as his love affair continued to develop, he learned the fine art of pairing wine with food. Wayne takes particular pride and pleasure in making pairing recommendations that will please both the palate and senses.
Wayne, like so many that have gone before, worked his way up through the ranks in the food & beverage industry in many stand-alone restaurants and hospitality venues, while also pursuing his Associates Degree in Culinary Arts. His most notable experiences were working as a Chef Apprentice and then AM Sous Chef under Serge Falestich, formerly of Spago Los Angeles and participating in a TV Food Network event during his tenure with the 4 star, 5 diamind Princeville Resort in Kauai. Wayne’s primary goal at the Vineyards Chop House-Bar and Crowne Plaza Hotel is to create an unforgettable hospitality experience whether you are enjoying a nice steak dinner or attending a banquet function.
